30 year Old Shepherd Recipes   Venture into the kitchens of the past if you dare by trying these old fashioned recipes of a bygone generation of Shepherd homemakers.

 

SOUTH OF THE BORDER CASSEROLE  by  Martha McDowell  -  1978

 

½ cup margarine                           1 large can yellow hominy

1 large bell pepper                        1 medium can chili (without beans)

3 small green onion bunches        1 can cream of mushroom soup

1 ½ lb. ground meat                      2 cups grated cheese

3 cloves garlic, mashed                 1 ½ cups crushed corn chips

 

     Chop bell pepper and green onions;  sauté in margarine.  Add ground meat and cook until brown.  Separate meat with a fork.  Combine all ingredients, except cheese and chips.  Mix well.  Place in a large casserole dish.  Cover with a thick layer of grated cheese, then corn chips.  Bake at 350 degrees for 45 minutes.
