SMOTHERED STEAK AND VEGETABLE DISH by Mrs. Weaver Stripling - 1961
1 Swiss steak 4 carrots
4 medium potatoes 1 large onion
Salt, pepper, and flour steak; brown in a small amount of shortening in a heavy skillet or Dutch oven. After browned on both sides, add a cup of water, cover, and let simmer until steak is almost done. Add chopped potatoes, sliced carrots, and onions on top of the steak. Salt vegetables, cover and cook until vegetables, and steak are done. Serve while hot.
