SALAD DRESSING  by  Ruth McKellar  -  1961

Put the juice of 2 small lemons to heat.  When hot, add yolks of 2 eggs beaten with 2 Tbsp. sugar.  Add a small piece of butter and cook until thick.  When very cold, add 1 cup whipped cream.

This may be used with chicken salad.  Pineapple, celery, nuts and soaked seedless raisins in any desired combination may also be used.  Cabbage, carrots, and apples form a good combination.  Dash of paprika improves.

This is Miss Bessie Hale’s prize salad dressing recipe.
