HOT POTATO SALAD by Mrs. H. H. Neil – 1956
6 medium sized potatoes ¼ cup water
1 medium sized onion, sliced ½ cup vinegar
4 slices bacon, minced 1 tsp. sugar
2 Tbsp. bacon drippings ½ tsp. salt
¼ tsp. pepper
Cook potatoes in jackets. Cool, skin, and slice. Pan broil minced bacon, then sauté onion in bacon drippings until brown. Combine and heat water, vinegar, sugar, with potatoes. Place in baking dish and heat in moderate oven, 350 deg., before serving.
