25 year Old Shepherd Recipes   Venture into the kitchens of the past if you dare by trying these old fashioned recipes of a bygone generation of Shepherd homemakers.

 

GREEK SALAD – MY WAY      by Lillie Copley  -  1983

 

Lettuce (Romaine and other lettuce)               red wine vinegar to taste(Heinz Gourmet is

black olives, sliced                                              super)

tomatoes                                                        ¼ tsp. garlic, chopped

1 cucumber, sliced                                         dash oregano

Feta cheese                                                     dash of salt

1/3 cup olive oil                                             coarsely ground black pepper to taste

 

      Wash and dry lettuce; break in bite size pieces.  Chop tomatoes in large pieces.  Slice cucumber and olives.  Mix together and crumble Feta cheese over vegetables.  Combine olive oil, wine vinegar, garlic, oregano, salt and pepper. Shake or beat dressing to mix.  Add dressing right before serving.  Delicious!
