   I have used the following fig preserves recipe many times and obtained it from a fig plant, so you can depend on its being good.  Use 5 lb. figs, 1 lb. sugar, and 2 cups water.  Peel figs very lightly, leave a small stem.  Boil sugar and water for 20 minutes, before adding figs.  Then simmer 3 ˝ to 4 hours.  If some seeds come to surface, remove before canning.  Figs turn dark because they are cooked too long or too fast.
