CRANBERRY RING–AROUND–GRAPEFRUIT MOLD by Susan Tribe Whitcomb –
1961
Set out a 1 ½ qt. ring mold. Pour into a small bowl ½ cup cold water. Sprinkle 2 tbsp. (2 envelopes) of unflavored gelatin over water. Let stand about 5 minutes to soften. Dissolve completely by placing bowl over very hot water.
Meanwhile, blend thoroughly.
4 cups (2 - 1 lb. cans whole cranberry sauce)
¼ cup orange juice
2 tsp. grated orange peel
When gelatin is dissolved, blend into the cranberry mixture. Chill until mixture begins to jell (gets slightly thicker). Lightly oil the mold with salad or cooking oil (not olive oil); set aside to drain.
Chop and set aside ½ cup (about 2 oz.) pecans. Cut into small pieces 16 (1/4 lb.) marshmallows; set aside.
When gelatin mixture is of desired consistency, stir in the nuts. Spoon ½ of the gelatin mixture into the mold. Top with marshmallow pieces. Spoon in the remaining gelatin mixture. Chill in refrigerator until firm. Unmold onto chilled platter. Fill center with grapefruit sections. If desired, garnish with few sprigs of mint.
